- For the waffles
- ½ cup soft butter
- ½ cup sugar
- 2 Tbsps Vanilla sugar
- 3 eggs
- 1 ½ cups all-purpose flour
- 1 tsp Baking powder
- For the cream
- ½ cup Yogurt
- 1 Tbsp lemon juice
- ½ tsp Organic lemon zest
- 1 Tbsp Vanilla sugar
- 2 Tbsps Lemon curd
- ½ cup cream (lightly whipped)
- fresh Raspberries (to garnish)
Preparation steps
1.
Mix together the butter, sugar and vanilla sugar until creamy. Add the eggs one by one and beat until smooth.

Mix together the flour and the baking powder and gradually stir into the wet ingredients.

Grease the waffle iron and place a small amount of the batter per waffle into the iron and bake until golden brown.
4.
To make the lemon cream, mix together the yogurt, lemon juice, lemon zest, vanilla sugar and the lemon curd. Fold in the cream.
5.
Serve the waffles with the cream and the berries and garnish with mint and icing sugar.
