- 14 ozs Spaghetti
- 2 cloves garlic cloves (finely chopped)
- 1 red chili pepper (finely chopped)
- ½ cup smoked Bacon (streaky, American)
- 4 Tbsps olive oil
- Curry powder
- ⅞ cup dry white wine
- 3 ⅓ cups clam (thoroughly washed, discarding any that are open)
- 2 Tbsps freshly chopped parsley

Preparation steps

Cook the pasta in boiling salted water until al dente.

In a hot pan, briefly fry the garlic, chilli and bacon in oil. Season with a pinch of curry powder, salt and ground black pepper, and deglaze with the wine. Simmer, uncovered, for around 2 minutes, then add the clams, cover and cook for around 6 minutes until all the clams have opened. Discard any that have not opened.

Add the parsley and season to taste with salt, a dash of lemon juice and ground black pepper. Stir through the drained pasta and serve.
