- For the broth
- 1 ½ liters Beef broth
- 2 carrots
- 2 potatoes
- 2 Kohlrabi
- For the meatballs
- 1 day-old White roll
- 1 shallot
- 1 Tbsp butter
- 400 grams Ground meat
- 2 Tbsps breadcrumbs
- 2 Tbsps parsley (finely chopped)
- 1 egg
- salt
- peppers
- Nutmeg
- Kohlrabi (for garnish)

Preparation steps
1.
Rinse and trim the vegetables, cut into bite-sized pieces and simmer for about 10 minutes in the broth.

Soak the bread in water.

Peel the shallot, chop and sauté in hot butter until translucent.
4.
Mix the ground beef with the squeezed-out bread, bread crumbs, parsley, shallot and egg. Season with salt, pepper, nutmeg. With moistened hands, form into small balls and carefully drop into the soup. Cover and simmer for about 8-10 minutes. Season again with salt, pepper and nutmeg. Pour the soup into bowls and serve garnished with kohlrabi greens.
