For the dough
200 grams soft butter
200 grams sugar
1 Vanilla bean (seeds)
4 eggs
1 untreated Orange (juice and zest)
250 grams Pastry flour
125 grams cornstarch
1 packet Baking powder
150 milliliters Orange juice
For decorating
250 grams powdered sugar
4 Tbsps Orange juice
Marshmallow
Red Decorating icing
Rubber cord
size Gummy bear
Sugar pearls

Preparation steps

Preheat oven to 180°C (approximately 350°F).

For the dough: Beat butter with a hand mixer until frothy, sprinkle in sugar, add vanilla and stir for about 5 minutes more. Add eggs one at a time and stir well. Add orange juice and peel. Combine flour, cornstarch and baking powder and stir into egg mixture to make a smooth dough. Lightly grease cake pan and dust with flour. Pour mixture into form and bake in preheated oven for about 45 minutes. Let cool cake in the pan, carefully remove from the mold and leave to cool on a wire rack.

For decorating: Cut cake one in half vertically. From one part cut the locomotive, halve the second half again horizontally. This yields the 2 cars. From remaining parts cut out the round chimney. For topping, mix powdered sugar with orange juice to a smooth icing. Cover all parts with icing, set chimney on the locomotive and allow to everything to dry.

Place marshmallows with toothpicks as wheels of locomotives and carriages. With sugar writing trace edges and paint on windows as desired.

Paint on windows, doors and other details with sugar writing on the locomotive. Connect locomotive with carriages with the rubber cords. On the first carriage place gummy bears as passengers and on the second decorate with sweets like sugar pearls. Allow everything to dry well, cut and serve.
