For the pops: Make the chocolate sponge cake. Once cool, turn out of the tin and crumble into a food processor. Pulse until you have cake crumbs.
Tip into a mixing bowl and add the chocolate ganache and butter, mixing well until a cake dough forms. Shape into 24 pops and set aside. Skewer with the party sticks and set upright in a styrofoam box. Chill for 30 minutes.
To decorate: Place the chocolate in a heatproof bowl and microwave in 15-second intervals until melted, stirring in between. Once melted, dip the pops into the melted chocolate, turning to coat. Sit upright in a styrofoam box and sprinkle their tops with sugar sprinkles.
Chill for 30 minutes before serving.
