250 grams Pork tenderloin
250 grams Veal fillet
250 grams Beef fillet
2 lemons
50 grams Dark chocolate (60% cocoa)
1 tsp Instant coffee
1 sm can ground saffron
6 Tbsps olive oil
2 Tbsps breadcrumbs
150 grams Whipped cream
salt
freshly ground peppers

Preparation steps

1.

Place the meat in the freezer, then carefully cut into thin slices. Squeeze the lemons, place half of juice into a bowl, add the slices of meat to it and turn and drain in a colander.

Grate th chocolate and mix with the coffee powder and saffron and set aside. Heat 3 tablespoons olive oil in a skillet over high heat and sear meat slices, in batches, about1 minutes. Keep warm.

Saute the breadcrumbs in remaining oil. Once the breadcrumbs are lightly browned, remove from heat, stir in the chocolate coffee mixture and cream.

4.

Simmer 5 minutes and season with remaining lemon juice, salt and pepper. To serve, spoon the sauce onto warmed plates and arrange the meat on top Serve with saffron rice. (Rice cooked with 1/2 jar of saffron and 1 tablespoon butter stirred in.)
