- 6 ½ cups Sweet potato (peeled and quartered)
- 2 cups macaroni
- 3 Tbsps olive oil
- 2 onions (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 6 rashers fatty Bacon (chopped)
- ¼ cup butter
- ½ cup milk
- 2 cups grated Cheese
- 4 cups Spinach (washed and coarsely chopped)

1 Bowl, 1 Cutting board, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Juicer, 1 Citrus juicer
Preparation steps
1.
Heat the oven to 200ºC (180º fan) 400ºF, gas 6. Boil the sweet potato in a large pan of salted water until just tender. In a separate pan, cook the macaroni according to packet instructions, drain then set aside.

Meanwhile, heat the oil in a frying pan and cook the onions until soft. Add the garlic and bacon and cook for a further 3 minutes.

Drain the sweet potatoes, return to the pan and add the butter and milk. Mash roughly with a fork, season with salt and pepper and mix in the onion and bacon mixture, the cooked macaroni, half the grated cheese and the spinach.
4.
Put the mixture into an ovenproof dish, scatter over the rest of the cheese and bake in the oven for 20 - 25 minutes or until golden brown.
