- 1 unwaxed Orange (finely grated zest and juice)
- 1 ¼ cups Polenta (cornmeal)
- ¾ cup Almond flour
- 5 ozs honey
- 1 tsp gluten-free Baking powder
- 11 ozs plain Yogurt
- 5 eggs
- 1 cup butter (scant)
- To serve
- Whipped cream
- To decorate
- rosemary

Preparation steps
1.
Heat the oven to 180°C (160°C fan), 375°F, gas 5. Grease a 23cm|9" cake tin and line the base with non-stick baking paper.
2.
Put the orange zest and juice, polenta, almonds, honey, baking powder, yoghurt and eggs in a bowl. Add the melted butter and mix together thoroughly.
3.
Pour the mixture into the cake tin, smooth the top and bake for about 50 minutes until golden brown. Cool in the tin.
4.
Serve with whipped cream and decorate with rosemary, if desired.
