2 ¼ cups all-purpose flour
2 tsps Baking powder
¼ tsp salt
¾ cup coconut sugar
2 Tbsps Agave syrup
¼ cup sunflower oil
1 cup milk
2 tsps Cider vinegar
1 unwaxed lemon (2 tbsp juice and finely grated zest)
For the drizzle
2 Tbsps Agave syrup
2 Tbsps lemon juice

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 13cm x 23cm|5? x 9? loaf tin and line the base with non-stick baking paper.

Sift the flour, baking powder and salt into a mixing bowl and stir to combine.
3.
Whisk together the sugar, syrup, oil, milk, vinegar and lemon juice, then stir in the lemon zest.
4.
Pour the wet ingredients into the dry ingredients and stir until well combined.
5.
Put into the tin and bake for about 40 minutes, until a skewer inserted into the centre comes out clean. Cool in the tine for a few minutes then place on a wire rack.
6.
For the lemon drizzle: stir together the syrup and lemon juice until blended.
7.
Poke holes in the cake with a skewer. Gently spoon the syrup over the top of the cake and leave to cool completely..
