63 ozs beef Short rib
salt (to taste)
freshly ground peppers (to taste)
2 yellow onion (diced)
3 carrots (peeled and diced)
6 garlic cloves (sliced)
2 cups stout beer

Preparation steps

Heat a large sauté pan on high heat with oil and let the pan get hot. Season the short ribs with salt and freshly ground black pepper very liberally. When the pan is hot, add the ribs and brown them for 3 to 5 minutes per side, to give them a nice caramelized crust. Remove the ribs from the pan and transfer to a plate.

Next add the diced onions, carrots and garlic to the pan and cook for 5 minutes. Season these vegetables well with salt and freshly ground black pepper.

Transfer all of vegetables to a slow cooker, then gently place the ribs over the vegetables and cover with the stout. Put a lid on the slow cooker to cover and cook for the ribs for 6 hours.

When ready to serve, remove the ribs from the slow cooker and plate with the cooked carrots and a little sauce from the bottom of the slow cooker. Garnish with some fresh herbs like oregano and serve.
