1 onion
1 Tbsp butter
1 tsp freshly chopped Sage
1 tsp chopped thyme
150 grams Crème fraiche
½ pkg Puff pastry dough (225 grams)
salt

Preparation steps

Preheat the oven to 220°C (approximately 425°F).

Defrost the puff pastry. Rinse the spinach, blanche in boiling salted water, then drain, rinse, squeeze with your hands to remove excess water and coarsely chop. Peel and slice the onion into thin wedges, then sauté in hot butter. Add the spinach and herbs, lightly saute, then stir in the creme fraiche. Sprinkle in the nutmeg and lemon juice then season with salt and pepper.

Roll out the pastry on a lightly floured surface and cut out 4 circles of about 12 cm in diameter. Roll the excess dough to form thin rolls for the edges. Place the puff pastry circles on a lined baking tray, brush the edges all around with water and place the pastry rolls all around the edges, pressing it down slightly. Fill with spinach and bake until golden brown, about 30 minutes. Serve immediately.
