- 500 grams Spinach
- salt
- 4 scallions
- 1 garlic clove
- 200 grams cream cheese
- 150 milliliters Whipped cream
- 4 eggs
- 100 grams grated Gruyere
- 100 grams grated Parmesan
- peppers
- Nutmeg
- soft butter (for the pan)
- 250 grams Puff pastry dough
- 2 shallots
Preparation steps
Rinse spinach, clean and blanch in salted water. Drain and press out water. Chop well. Rinse scallions, clean and cut into rings. Peel garlic and chop finely. Mix cream cheese with whipping cream and eggs until smooth. Mix Gruyere cheese and Parmesan. And spinach, scallions, garlic and half the cheese mixture into cream cheese. Season with pepper, nutmeg and a little salt to taste.
Preheat oven to 200°C (approximately 400°F). Butter quiche dish.
Roll out puff pastry and cut to a size slightly larger than the pan. Place pastry in pan and cut any protruding edges. Spread spinach mixture over the puff pastry. Peel shallots and cut into rings. Spread shallots over the spinach and sprinkle with remaining cheese. Bake in the oven for about 50 minutes until golden brown. Remove from oven and serve.
