½ cup candied Orange peel (finely chopped)
½ cup candied Lemon peel (finely chopped)
2 Tbsps fresh lemon zest
3 ¾ cups all-purpose flour (plus extra for dusting work surface)
1 ⅔ cups Whole wheat flour
¾ cup kirsch (cherry brandy)
2 sheets baking Wafer paper (optional)
For Icing
1 ¼ cups powdered sugar
1 Tbsp lemon juice

Preparation steps

In a medium saucepan, over medium heat bring the honey, brown sugar, cinnamon, cloves and nutmeg to a boil, stirring constantly. Add the almonds, hazelnuts, walnuts, candied citrus and lemon zest, stirring to incorporate. Remove from heat and set aside to cool.

Combine the flour, Kirsch, and honey mixture. Turn the dough onto a lightly floured work surface and knead quickly until smooth. Divide the dough into two equal portions.

Line two jelly roll pans with baking wafer sheets (optional) or parchment paper. Roll out the dough to a thickness of 1/4-inch. Transfer the dough to the prepared pans, cover and chill in the refrigerator overnight.

$. Preheat the oven to 400º F. Bake for 15 to 20 minutes. Let cool. Cut into small bite-size squares.

In a small bowl, combine confectioners' sugar with 1 tablespoon of lemon juice, adding more juice if necessary to achieve a thick spreadable glaze. Brush a thick layer of glaze on each square. Serve.
