- 300 grams redfish fillet
- 1 Tbsp lemon juice
- salt
- freshly ground peppers
- 150 grams Snow peas
- 400 grams carrots
- 1 Tbsp olive oil
- 200 milliliters Vegetable broth
- 2 Orange juice
- 1 tsp Mustard
- 3 Tbsps Whipped cream

Preparation steps
1.
Rinse fish fillet, pat dry, remove any bones and season with lemon juice, salt and pepper.
2.
Rinse snow peas, trim and cut ends.
3.
Rinse carrots, peel and cut into fine strips.
4.
Cook carrots and snwo peas in salted water for about 7 minutes.
5.
Meanwhile, fry the fish on both sides in olive oil briefly, add vegetable broth, orange juice, mustard and cream and cook for 5 minutes. Season with salt and pepper.
6.
Drain vegetables and arrange on plates with the fish.
