Sigara Böreki

- 2 Filo dough (each approximately 30 x 30 cm)
- 400 grams Feta
- 1 handful parsley
- 1 sprig thyme
- 2 Tbsps olive oil
- freshly ground peppers
- ½ tsp ground paprika (hot)
- 1 egg
- 1 Tbsp black Sesame seeds
- 1 Tbsp white Sesame seeds
Preparation steps
Spread dough on a flat surface and cut into 12-16 triangles. Mash feta cheese with a fork. Rinse herbs, shake dry, pluck off leaves and chop finely. Combine feta with herbs, oil, season with pepper and hot paprika and mix well. Separate egg and beat egg white.
Arrange triangles of dough so that the tip points upwards. Place about 1-2 tablespoons of feta mixture on the lower quarter of the triangle and fold opposite side to the middle. Roll the dough to center. Brush the tip of a triangle with egg white and roll up dough tightly. Prepare all boreks in the same manner.
Arrange boreks on a lined with parchment paper baking sheet and brush with beaten egg yolk. Sprinkle with sesame seeds and bake in preheated oven at 200°C (approximatley 400°F) for about 10-15 minutes or until golden brown. Remove from oven and serve.
