- 1 onion (sliced)
- 2 cloves garlic cloves (chopped)
- 4 Tbsps olive oil
- ¼ cup sherry
- 2 Tbsps lemon juice
- 1 tsp dried oregano
- 3.333 cups pork fillets (finely sliced)
- Coriander
- 6 Tomatoes (sliced)
Preparation steps

Fry the onion and garlic in 1 tbsp hot oil. Deglaze with the sherry and the lemon juice and remove from the heat. Sprinkle with oregano and season with salt and ground black pepper.

Season the meat with salt, ground black pepper and coriander. Drizzle with 2 tbsp oil and grill on all sides for 3-4 minutes.

Arrange the tomatoes on a large platter or 4 plates. Top with the meat, add the dressing and drizzle with the remaining oil. Steep for around 10 minutes and then serve.
