- 1 large Cauliflower (approx. 1 kg, divided into florets and halved)
- 4 Tbsps Ghee
- 1 pinch ground Saffron
- 2 garlic cloves (finely chopped)
- 1 ½ inches fresh ginger (cut into thin strips)
- 1 tsp Cumin
- 2 green chili peppers (seeds removed, cut into fine strips)

Preparation steps
1.
Blanch the cauliflower in salt water for 2-3 minutes then drain.

Heat the ghee in a large skillet and fry the saffron, garlic, ginger, cumin and chilli for a few minutes. Add the cauliflower and fry gently for approx. 10 minutes, stirring occasionally. If necessary add a little water make sure if has all evaporated at the end.
3.
Season with salt and ground black pepper and serve in bowls.
