- 250 grams Cabbage
- 200 milliliters store-bought Cabbage
- sugar (as needed)
- 200 milliliters Red wine
- 1 sprig rosemary
- 3 Tbsps lemon juice
- 7 sheets silver gelatin
- rosemary (for garnish)
- 4 Cherries

Preparation steps

Rinse the cherries, halve, pit and place in a strainer set over a bowl (to collect the juice). Soak the gelatin in cold water. In a saucepan, combine any fresh cherry juice, store-bought cherry juice, lemon juice, red wine and rosemary. Add sugar to taste. Gently heat, cover and let infuse for 10 minutes. Discard the rosemary.

Squeeze any excess water from the gelatin, dissolve in the warm juice mixture and let cool. Distribute the cherries between the serving glasses, pour the gelatin mixture over top and chill until solidified in the refrigerator. Serve garnished with a whole cherry and some rosemary.
