- 1 ½ cups self-rising flour
- ⅓ cup rolled oats
- ¼ tsp salt
- ¾ cup milk
- ½ tsp Vinegar
- ½ cup honey (warmed)
- 1 small egg
- vanilla extract
- ⅛ cup butter (melted)
- ¾ cup Raspberries
- ½ cup chopped Pistachio (scant)
- To decorate
- 6 Raspberries

Preparation steps
1.
Heat the oven to 200°C (190°C fan) 400°F gas 6. Place paper cases in 6 muffin tins.
2.
Put the flour, oats and salt into a mixing bowl.
3.
Mix together the milk, vinegar, egg, vanilla and warmed honey.
4.
Slowly pour the liquid mixture into the flour mixture and mix until incorporated.
5.
Pour in the melted butter and mix until smooth. Stir in the pistachios and raspberries.
6.
Spoon into the paper and bake for 20-25 minutes until golden and risen. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
7.
Place a raspberry on each muffin.
