- 1 small Hokkaido pumpkin
- 3 Tbsps Crème fraiche
- 2 tsps Bourbon vanilla
- 1 tsp salt
- 80 grams sugar
- brown sugar (to sprinkle)

Preparation steps

Rinse pumpkin, cut in half, remove seeds and peel and cut into small cubes. In a saucepan, add just enough water to cover pumpkin pieces. Add 1 tablespoon sugar, cover and cook until pumpkin is very soft. Drain, set aside 1 cup of cooking water and cool.

Mix pumpkin with vanilla, salt and sugar in a blender. Stir in creme fraiche. If mixture is too firm, add reserved cooking water until smooth.

Pour cream into serving ramekins, cool slightly and then cool in refrigerator for 30 minutes. Sprinkle with brown sugar, place on a baking sheet and carmelize under heat in oven or with a Bunsen burner. Serve immediately.
