4 slices air-dried ham
1 Baby chard
300 grams Romanesco broccoli
8 garlic cloves
5 Tbsps olive oil
1 Tbsp butter

Preparation steps

1.

Cut pork tenderloin into 8 equal slices and flatten each slice with a meat tenderizer. Rinse sage, shake dry and pluck leaves from branches. Cut ham slices in half crosswise.

Rinse baby chard and cut into strips. Rinse romanesco broccoli and chop. Peel garlic. Cover each slice of pork with 1-2 sage leaves and with half a slice of ham. Secure with toothpicks.

Heat 3 tablespoons olive oil in a pan and sauté baby chard with romanesco broccoli and garlic while stirring. Deglaze the pan with 50 ml (approximately 1 1/2 ounces) of water. Simmer over low temperature for 5-7 minutes and season with salt and pepper.

Meanwhile, heat remaining olive oil and butter in a pan and fry pork with the ham-side up for about 2 minutes. Turn pork over and season with salt and pepper. Fry for 1-2 minutes. Arrange pork and vegetables on plates and serve immediately.
