- ½ tsp baking soda
- ½ tsp Baking powder
- 1 tsp salt
- 1 cup unsalted butter
- 1 cup light brown sugar
- 1 cup sugar
- 1 cup crunchy Peanut butter
- 2 large eggs
- 2 tsps vanilla extract
- 1 cup salted, dry-roasted Peanuts (ground)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Whisk the flour, bicarbonate of soda, baking powder, and salt together and set aside.
3.
Beat the butter in a mixing bowl until creamy. Add the sugars and beat until fluffy.

Beat in the peanut butter until fully incorporated, then add the eggs, one at a time, followed by the vanilla.

Gently stir the dry ingredients into the peanut butter mixture. Add the ground peanuts and stir gently until mixed.

Working with a generous 2 tablespoons each time, roll the dough into 5cm|2" balls. Place the balls on the prepared baking sheets, spacing them 6cm|2 1/2" apart. Press each dough ball twice with a fork dipped in cold water to make a crisscross design.
7.
Bake for 10-12 minutes until the cookies are puffed and slightly browned around the edges but not on top. (The cookies will not look fully baked). Cool on the baking trays for 5 minutes, then place on a wire rack to cool completely.
