- 500 grams Tortiglioni pasta
- 1 ½ kilograms ripe Tomatoes
- 1 small onion
- 2 garlic cloves
- extra-virgin olive oil
- salt
- freshly ground peppers
- freshly grated Nutmeg
- 1 pinch Ground cinnamon
- 1 tsp sugar
- butter
- 2 Tbsps finely chopped Basil
- grated Parmesan

Preparation steps

Rinse the tomatoes, blanch, peel and cut into small pieces. Peel and finely chop the onion. Peel the garlic.

Heat 3 tablespoons olive oil in a large frying pan and saute the onion gently. Add the tomatoes with 3 tablespoons water and the garlic cloves. Cover and simmer for 3-4 minutes over medium heat. Remove the pan from the heat and season with sugar, salt, pepper, nutmeg and cinnamon. Sprinkle the basil over the top, cover and set aside.

Meanwhile, cook the pasta in boiling salted water until al dente. Drain, reserving 2 tablespoons pasta water. Mix the pasta 1 tablespoon butter and 2 tablespoons of the cooking water. Transfer to plates, top with 3-4 tablespoons of the sauce, sprinkle with Parmesan and serve immediately.
