- 14 ozs Pasta (shell type such as Riccioli)
- salt
- 1 handful Arugula
- 3 pcs Radicchio
- 2 stalks Celery
- 2 ozs Walnut
- 3 small Apple
- 1 Tbsp butter
- 1 white onion (cut into thin rings)
- 3 ozs Gorgonzola
- For Dressing
- 4 Tbsps Nut oil
- 2 Tbsps White vinegar
- 1 tsp medium hot Mustard
- 1 Tbsp honey
- salt
- freshly ground peppers

Preparation steps

Cook pasta in plenty of salted water until al dente. Rinse arugula and radicchio, cut radicchio into strips. Rinse and dry celery, cut into pieces. Toast walnuts in a dry a pan. Rinse apples, cut into slices, core. Heat butter in a grill pan, cook apple slices for about 3 minutes per side.

Remove from heat and add onions and celery to pan, mix well. Drain pasta, toss in a bowl with salad greens, celery, walnuts, apple slices, onions and Gorgonzola.

Combine all ingredients for dressing with 3-4 tablespoons of water and mix well. Season with salt and pepper. Toss salad with dressing, arrange on plates and serve.
