1 cup Almond flour
cup butter
cup caster sugar
1 ¼ cups self-rising flour
2 eggs (lightly beaten)
1 tsp vanilla extract
2 cups mixed Berry (raspberries, blueberries, blackberries)
powdered sugar (to decorate)

Preparation steps

Grease four individual tartlet cases. Heat the oven to 180ºC (160º fan) 350ºF, gas 4.

Place the ground almonds, butter, sugar, flour, eggs and vanilla extract in a bowl and beat well until the mixture is smooth.
3.
Spoon the mixture into the tartlet cases, reserving about four tablespoons, and scatter over the berries.
4.
Spoon the remaining almond mixture on top of the fruit and bake the tartlets for 20-25 minutes or until the top is golden brown. Sift a little icing sugar over the top and serve with any remaining berries.
