For the dough
200 grams Pastry flour
200 grams butter
100 grams powdered sugar
100 grams ground almonds
1 egg
¼ tsp ground cloves
½ tsp ground cinnamon
1 tsp grated Lemon peel
1 Tbsp lemon juice
For the filling and decoration
1 Tort Wafer (round)
400 grams Red currant jam
1 egg yolk

Preparation steps

For the dough, Combine the flour, butter and almonds. Knead briefly and combine with all the other ingredients into a smooth dough. Wrap the dough in plastic wrap and refrigerate for one hour.

Press 2/3 of the dough into the springform pan, coming slightly up the edge. Place the wafer on the dough and spread with jam to 1 cm (approximately 1/3 inch) from the edge.

Roll out 2/3 of the remaining dough and cut into 1 cm (approximately 1/3 inch) wide strips. Place the strips in a grid pattern on the jam. Rol the rest of the dough into a long, round strip and place around the edge of the pie, pressing down well.

Whisk the egg yolk with a splash of water, and brush the dough with it. Bake in a preheated 175°C (approximately 350°F) oven for 50 minutes. Let cool slightly and serve.
