- For the muffins
- Dough (for 12 muffins)
- 100 grams butter
- 100 grams sugar
- 2 eggs
- salt
- 2 tsps grated Lemon peel
- 60 milliliters lemon juice
- 1 Tbsp ground Poppy seeds
- 150 grams Pastry flour
- 2 tsps Baking powder
- For decoration
- 2 Tbsps powdered sugar
- 1 tsp lemon juice
- lemon zest
- ground Poppy seeds
- For baking
- 1 Muffin tin (12-cups)
- 12 Paper baking molds

Preparation steps
1.
For the muffins: Melt the butter in a small pot and cool slightly. In a bowl, stir the butter ith the sugar, eggs, 1 pinch of salt, lemon zest and lemon juice. In another bowl, stir the flour with the baking powder and poppyseeds. Add to the butter mixture and stir until thoroughly combined.

For baking: Line the muffin tin with the paper liners. Fill each 2/3 full with the batter. Bake in a 180°C (approximately 350°F) oven for 20-25 minutes. Remove from oven, remove muffins from tin and let cool completely.
3.
For decoration: In a bowl, stir the powdered sugar with the lemon juice until smooth. Drizzle the muffins with the glaze and sprinkle with lemon zest and poppyseeds.
