- 4 Basil (lightly crushed)
- 4 Tbsps olive oil
- 1 Eggplant (thickly sliced)
- 1 red Bell pepper (seeds removed and thickly sliced)
- 1 yellow Bell pepper (seeds removed and thickly sliced)
- 3 Zucchini (thickly sliced)
- 1 Fennel bulb (sliced lengthways)
- 1 onion (thickly sliced)
- salt
- freshly ground Black pepper
- To garnish
- 1 tsp torn Basil

Preparation steps
1.
Put the basil leaves and oil into a small screwtop jar and shake well. Leave to stand for 1 hour.

Heat the grill.
3.
Brush all the vegetables with the basil oil.
4.
Place the vegetables on the grill pan in batches, in a single layer. Cook for 5 minutes. Turn over and brush with more oil and cook for another 5-8 minutes until tender.
5.
Put into a serving dish and season to taste with salt and pepper. Sprinkle with the torn basil.
