- 1 cup chopped Pistachio
- 1 ½ cups sugar
- ½ tsp salt
- ½ cup soft unsalted butter
- 2 tsps vanilla extract
- 4 eggs (beaten)
- 1 cup all-purpose flour
- 15 small Chocolate (70% cocoa solids)
- ¼ cup slivered Pistachio

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Place paper cases in 12 muffin tins.
2.
Put the pistachios, sugar and salt in a mixing bowl and stir to combine. Beat in the butter until blended.
3.
Beat in the vanilla and eggs until well combined, then sift in the flour and stir until incorporated.
4.
Spoon the mixture into the paper cases to half fill them. Place a chocolate square on top, then cover with more mixture. Lightly press in the slivered pistachios.
5.
Bake for about 25 minutes until firm and cooked through. Place on a wire rack to cool for a few minutes. Serve warm.
