In a saucepan, bring butter to a boil with the 250 ml (approximately 1 cup) water. Remove from the heat, add the flour and stir rapidly. Return to the heat and stir with a wooden spoon until the dough pulls away from pan bottom and develops a white coating. Remove from the heat and gradually stir in the eggs until smooth. Fold in the cheese and season with salt, pepper and nutmeg.

Preheat the oven to 180°C (approximately 350°F).

Pour batter into a piping bag and pipe walnut-sized portions onto a baking sheet lined with parchment paper, spacing evenly. Brush with egg yolk and bake until golden brown about 20 minutes. Pull parchment paper from the baking sheet onto a wire rack and let cool.
