- For the cakes
- 6 ozs white chocolate
- 12 ozs madeira cake (or plain cake)
- For the coating
- 14 ozs white chocolate
- To decorate
- white Sugar pearls
- pink colored sparkling sugar
- Sugar Rose
- leaf Sugar decoration
- sugar heart

Preparation steps
1.
For the cakes: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water.
2.
Crumble the cake into a bowl and stir in the melted chocolate. Shape into small balls and insert a lollipop stick into each ball. Place on a tray, cover with cling film and chill for 30 minutes until firm.
3.
For the coating: melt the chocolate as before.
4.
Dip the cake balls into the melted chocolate to coat completely.
5.
Hold the cake pops over a sheet of non-stick baking paper and sprinkle over the sugar pearls and sparkling sugar. Lightly press in the sugar roses, leaves and hearts. Stand in a glass or cup and leave to set.
