- ¼ cup olive oil
- ⅛ cup extra-virgin olive oil
- 1 ½ Tbsps butter
- 2 Lemon soles (skinned)
- 1 ⅓ cups button Mushrooms (sliced)
- 2 Tbsps sun-dried tomatoes (drained and chopped)
- 2 cloves garlic cloves (minced)
- 2 Tbsps Chives (finely chopped)
- Chives (halved for garnishing)

Preparation steps
1.
Place 1 tbsp of chopped chives in a small bowl and grind using a pestle. Add the extra-virgin olive oil and stir well. Leave the oil to infuse to one side.
2.
Pre-heat the grill to hot.
3.
Rub the sole with the olive oil and season well. Arrange on lined trays and grill for 2-3 minutes on both sides until the flesh is just cooked through.

Melt the butter in a large frying pan set over a medium heat. Add the garlic and sauté for 1 minute, stirring frequently.
5.
Add the mushrooms and continue to sauté for 3-4 minutes until the mushrooms are softened.
6.
Remove from the heat and add the remaining chopped chives, stirring well. Adjust the seasoning to taste and spoon in a line onto two serving plates.
7.
Sit the sole on top across the mushrooms. Sprinkle the chopped sun-dried tomatoes all over the plate.
8.
Strain the chive oil into a clean bowl and drizzle over the plate. Serve immediately.
