Filled Pasta with Butter and Tomato
Cook pasta according to package directions in a pot with plenty of salted water until al dente. Rinse parsley, shake dry and chop. Rinse tomatoes, pat dry and cut into quarters. Peel onion and garlic and chop finely. Melt butter in a pan, sauté onion and garlic until soft, add tomatoes and let simmer over low heat for 3 minutes.
Drain pasta, spread on plates, mix Parmesan with parsley in a bowl and add to the pan. mix briefly and pour over pasta. Serve immediately and season with salt and pepper.
