- ⅞ cup light brown sugar
- ½ cup clear honey
- ⅞ cup butter
- 1 ⅓ cups Coconut flakes
- 1 ⅓ cups sliced almonds
- 1 ⅓ cups Candied cherry (quartered)
- ⅔ cup diced candied citrus peel
- 4 Tbsps all-purpose flour
- 1 ⅔ cups chopped semi-sweet chocolate

1 Pot, 1 Skillet, 1 Bowl, 1 Small bowl, 1 Plate, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Wooden spoon, 1 Sieve, 1 Citrus juicer
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line 2 large baking trays with non-stick baking paper.

Put the sugar, honey and butter in a large pan and heat until melted.
3.
Stir in the coconut, almonds, cherries, (reserve 20-24 quarters for the decoration) peel and flour until blended.

Spread the mixture in a thin layer on 1 baking tray. The mixture will spread as it cooks. Bake for 10-12 minutes until golden. Leave to cool and firm up a little, but not set hard.
5.
Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water.
6.
Turn the Florentine out onto the 2nd lined tray and peel off the baking paper. Spread the melted chocolate over, to cover.
7.
Leave to set, then cut out rounds with a cutter. Place a glace cherry in the centre of each Florentine.
