For the cupcakes
½ cup honey
cup dark brown sugar
0.333 cup butter
3 Tbsps milk
1 ⅔ cups all-purpose flour
2 tsps Baking powder
2 tsps ground cinnamon
1 tsp Mixed spice
2 Tbsps cocoa powder
2 eggs (beaten)
For the topping
½ cup unsalted butter
2 cups powdered sugar
1 Tbsp cream (35% fat)
vanilla extract
red and green Food coloring
To decorate
colored Sugar paste (400 g | 2 cups in total)
powdered sugar
½ cup white Sugar paste
colored piping icing (blue, yellow, green, pink)

Preparation steps

1.
For the cupcakes: heat the oven to 160°C (140° fan) 325°F gas 3. Place paper cases in a 12 hole muffin tin.
2.
Heat the honey, sugar, butter and milk in a pan until the sugar dissolves, then remove from the heat and set aside to cool.

Sift the flour, baking powder, spices and cocoa together and stir into the cooled honey mixture. Stir in the eggs until blended.

Spoon into the paper cases. and bake for 20-25 minutes until risen and firm to the touch. Cool in the tin for 5 minutes then place on a wire rack to cool completely.

For the topping: beat the butter in a bowl until soft. Sift in the icing sugar and beat until smooth. Beat in the cream and vanilla until blended.
6.
Divide the mixture into 2 bowls. Stir in a few drops of green food colouring into one bowl and red into another.
7.
Spread the buttercream onto the cakes.
8.
Roll out the coloured sugarpastes separately on a surface dusted with icing sugar. Cut out small rounds with a crimped- edged cutter, slightly smaller than the diameter of the cakes and smaller rounds as in the photo.
9.
Place the largest sugarpaste rounds on the cakes.
10.
Brush the smaller rounds with water and attach to the larger rounds. Repeat with the remaining rounds.
11.
Roll pieces of white sugarpaste into 12 egg shapes. pipe on patterns, dots, etc. with the piping icing and leave to set.
12.
Brush the top round of sugarpaste with a little water and attach the eggs. Leave to dry.
