Slit the vanilla pods open lengthwise and scrape out the seeds. Put the flour on a work surface with the ground almonds, sugar, butter (in small flakes), a little cream and the vanilla seeds and quickly knead to a smooth dough.
Divide the dough into 4 portions and, working on a floured work surface, form into sausages 2-3 cm in diameter. Wrap in clingfilm and chill overnight.
Preheat the oven to 160°C (with fan). Line a baking tray or baking trays with baking parchment.
Cut each sausage of dough into 12-15 pieces. Shape into crescents and place on the baking trays.
Bake in the preheated oven for about 12 minutes, or until nicely browned. Remove from the baking tray with the baking parchment and dust with icing sugar while still warm. Leave to cool.
Pack individually in cellophane wrap and tie the ends with silver ribbon.
