Preparation steps

Boil the eggs to the soft-boil stage, about 3 to 4 minutes.

Meanwhile, scoop out the center of each mozzarella ball to accommodate the egg yolk.

Carefully peel the eggs and separate the yolks from the egg whites. Place the egg yolk into the center of each mozzarella ball. Sprinkle brown sugar over the top of each egg yolk. Using a kitchen torch, gently scorch the sugar until a light, crispy layer forms. Serve.
