- 1 cup butter
- 1 cup caster sugar
- 5 eggs
- 2 cups self-rising flour
- ½ tsp grated Nutmeg
- 0.333 cup Candied cherry (rinsed, dried and quartered)
- 1 cup Currants
- 1 cup Golden raisins
- ¾ cup diced candied citrus peel
- 4 Tbsps milk
- ½ cup Almond flour
Preparation steps

Heat the oven to 170°C (150° fan) 300°F gas 3. Grease and line a 22 cm|9" square cake tin with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until light and fluffy. Add the eggs, one at a time with a teaspoon of the flour, beating well after each addition.

Sift the remaining flour with the nutmeg and fold into the butter mixture. Fold in the fruits and peel and mix well.
4.
Gently fold in the milk and ground almonds. Spoon into the tin and slightly hollow the center with the back of a spoon.
5.
Bake for 1 1/2- 2 hours until cooked through. Insert a skewer into the centre of the cake, it will come out clean when the cake is cooked. Cool in the tin for 10 minutes, and then place on a wire rack to cool completely.
