- 6 ripe Tomatoes
- 1 shallot
- 4 Tbsps sugar
- ½ tsp chili peppers
- 50 milliliters Vegetable broth
- 3 Tbsps White vinegar
- 3 Tbsps Ketchup
- salt
- freshly ground peppers
- 20 grams clarified butter
- 4
- 2 Tbsps Curry powder
Preparation steps

Rinse tomatoes, cut out stems and blanch. Peel, quarter and dice tomatoes finely. Peel and finely chop shallot. In a pan, caramelize sugar, then add tomatoes, shallots and diced chiles. Cook 2-3 minutes. Deglaze with broth and vinegar. Simmer over medium heat about 5 minutes.

Puree ingredients. Add ketchup and season with salt and pepper. In a pan, melt butter and fry sausages on all sides until browned. Remove from pan and cut sausages into pieces. Transfer to bowls. Drizzle sausages with sauce and sprinkle with curry powder.
