- ¾ cup Oatmeal
- 1 ¼ cups rolled oats
- 1 cup all-purpose flour
- 1 tsp Baking powder
- ½ tsp baking soda
- ½ tsp ground cinnamon
- 1 pinch salt
- ⅔ cup butter
- ¾ cup light brown sugar
- 2 eggs
- 3 ½ ozs Dried Apple ring (chopped)
- powdered sugar
Preparation steps
1.
Mix together the oatmeal, oats, flour, baking powder, bicarbonate of soda, cinnamon and salt.

Beat together the butter and brown sugar in a mixing bowl until fluffy. Add the eggs, one at a time until thoroughly blended.
3.
Add the oatmeal mixture and apples and mix to a dough. Shape the dough into a 30cm|12" roll, wrap in cling film and chill for about 1 hour.
4.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
5.
Sift a little icing sugar onto a plate.
6.
Cut the dough with a sharp knife into 1cm|1/2" thick slices and coat with the icing sugar.
7.
Place on the baking trays and bake for 10-12 minutes until golden brown. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
