- 1 kilogram Crookneck pumpkin
- ½ tsp Chili powder
- vegetable stock
- salt
- peppers (freshly ground))
- 1 Tbsp lemon juice
- 4 Tbsps parsley (finely chopped)
- Crème fraiche

Preparation steps

Peel the pumpkin, remove the seeds, and cut the flesh into small pieces. Add to a saucepan and add enough vegetable stock to just cover it. Bring to a boil, reduce the heat, cover, and cook over low heat for 25 minutes, or until soft.

Completely puree the pumpkin, and season with the salt, pepper, lemon juice, and chili powder. Mix in 2-3 tablespoons of parsley. Divide the soup into bowls and garnish with a dollop of the creme fraiche, and the remaining parsley.
