- 1 chicken (1,2 kg, breasts and thighs)
- salt
- freshly ground peppers
- onions (100 grams)
- carrots (100 grams)
- 50 grams Bacon
- 1 Tbsp butter
- 1 Tbsp olive oil
- 1 garlic clove
- 200 milliliters French Red wine (such as Burgundy)
- 200 milliliters chicken stock (Homemade or from a jar)
- 1 bay leaf
- 1 thyme
- 2 Sage
- 1 rosemary
- 150 grams small button Mushroom
Preparation steps

Rinse and pat dry chicken.

Season with salt and pepper.

Peel onions and carrots. Chop onions, slice carrots and cut bacon into strips.

Heat butter and olive oil in a roasting pan and brown chicken pieces and bacon. Remove chicken breasts and set aside. Add onions and carrots to the roasting pan. Peel garlic, squeeze through a garlic press and add to the pan, saute for about 3 minutes. Add wine and chicken stock and saute briefly. Add herbs and cook, covered, in preheated oven at 200°C (approximately 400°F) for about 25 minutes. Clean mushrooms and add together with chicken breasts to the roasting pan. Uncover and cook for 8-10 minutes more. Remove from the oven and serve with baguette.
