2 cans clam (in water)
1 Tbsp butter
4 rashers Bacon (chopped)
2 onions (finely chopped)
1 clove garlic cloves (finely chopped)
2 Tbsps flour
2 large potatoes (cut into cubes)
1 Tbsp thyme
1 bay leaf
½ cup cream (30% fat)

Preparation steps

1.
Drain the clams, reserving the liquid, and set aside. Put the liquid in a measuring jug and add enough water to make the volume up to 750 ml.
2.
Heat the butter in a pan and gently fry the bacon until lightly browned. Remove the bacon from the pan and set aside.
3.
Put the onion and garlic in the pan and cook gently until soft but not brown. Return the bacon to the pan and scatter over the flour. Cook for 2 minutes, stirring all the time.
4.
Gradually add the clam liquid, stirring all the time, then add the potatoes and thyme. Season with salt and pepper then simmer very gently until the potatoes are very tender. Add a little more water if needed.
5.
Add the clams and cream, reheat very gently and serve in warmed bowls.
