1 ½ cups Pecan (toasted)
1 ¼ cups chocolate wafer cookie (finely crushed)
½ cup powdered sugar
2 tablespoons cocoa powder
2 tablespoons light corn syrup
¼ cup Rum
For Decoration
½ cup marzipan paste
3 tablespoons powdered sugar (plus extra for dusting)
red and green Food coloring

Preparation steps

Place oven rack in the center of the oven and preheat oven to 350º F. Place the pecans on a baking sheet and bake for about 8 minutes, or until fragrant and lightly browned. Cool completely, once cool chop and place in the food processor and pulse until finely chopped. Transfer to a large bowl.

Process the chocolate wafers in the food processor until finely ground and add crumbs to the pecans. Add confectioners' sugar and cocoa powder, stirring to combine. Add the corn syrup and rum (adding additional rum if necessary) and mix well. Chill for at least 1 hour.

Shape into i-inch balls and dust with confectioners' sugar. Knead the marzipan with the confectioners’ sugar. Divide the marzipan in half. Color one half with red food coloring and roll into small balls for the berries. Color the remaining half green and shape into holly leaves. Before serving dust with confectioners’ sugar and add the marzipan leaves and berries. Serve.
