- ¾ cup cocoa powder (more, if required)
- 1 cup milk
- ⅓ cup butter (soft)
- vanilla extract (to taste)
- salted Peanuts (to sprinkle)

Preparation steps
1.
Line a baking tin with grease-proof paper, including around the edge.

Put the sugar, cocoa and milk in a pan, mix together well and bring to the boil, stirring constantly. Turn the heat down and stop stirring. Continue cooking, monitoring the temperature using a sugar thermometer - it needs to reach 114°C. (Alternatively, test whether a drop of the boiling mixture, when dropped into a cup of cold water, forms into a soft, malleable lump).

Remove the pan from the heat and stir in the butter and the vanilla extract. If necessary, stir in a little extra cocoa powder to get the desired colour. Beat with a wooden spoon until the fudge is no longer shiny.
4.
Pour the mixture into the baking tin, smooth flat and leave to cool.
5.
To serve, use a spoon to form into scoops if desired and sprinkle with peanuts.
