- For the dough
- 1.333 cups flour
- 1 cup Almond flour
- ⅔ cup butter
- ⅔ cup powdered sugar
- ½ lemon (grated rind)
- 4 egg yolks
- For the filling
- 1 ½ ozs Dark chocolate (70%)
- ⅔ cup Ricotta cheese
- ¼ cup crumbled Amaretti biscuits
- 2 Tbsps sugar
- For the strawberry sauce
- 2 cups Strawberries
- ¼ cup sugar
Preparation steps

For the dough, knead the dough ingredients to a smooth dough, cover and chill for 30 minutes.

For the filling, melt the broken chocolate in a bain-marie, then mix with the ricotta, amaretti crumbs and sugar and put into the fridge for about 30 minutes.

For the sauce, wash and hull the strawberries and cook with the sugar and 1/2 cup of water for about 5 minutes. Push through a sieve and leave to cool.

Heat the oven to 180°C.

Roll the dough out thinly on a floured work surface and cut in half. Cover one half with teaspoonfuls of the filling, placed some distance apart. Then lay the second half on top. Press together between the piles of filling and cut out 4-5 cm squares using a pastry wheel.

Place on a baking tray lined with baking parchment and bake in the preheated oven for about 20 minutes. Take out and cool on a cake rack. Serve the ravioli on plates with strawberry sauce.
