150 grams sugar
Bitter almond oil
30 grams butter (cut into pieces)
2 eggs
2 Tbsps Orange juice
200 grams blanched whole almonds

Preparation steps

Mound the flour and baking powder on a work surface. Sprinkle with almond oil and make a well in the center. Add butter pieces, eggs, and orange juice and knead to a smooth dough. Knead in the almonds knead. Divide into 5 equal pieces and shape into logs. Dust with flour and chill in the refrigerator for about 30 minutes.

Arrange the logs on parchment-paper-lined baking sheets, spacing them about 5 cm (2 inches) apart. Bake in an oven preheated to 180°C (approximately 350°F) for about 15 minutes. Cool slightly and then cut the logs on an angle into slices about 2 cm (3/4 inch) thick.

Turn the oven down to 150°C (approximately 300°F). Return the cantucci slices to the baking sheets and put them in the oven for about 15 minutes to dry.

Allow to cool completely before serving. Accompany with Vin Santo if desired.
