- For the muffins
- ½ cup butter
- ⅓ cup caster sugar
- 2 Tbsps light brown sugar
- 2 eggs
- 1 ½ cups all-purpose flour
- 1 tsp Baking powder
- 1 pinch salt
- ½ cup milk
- 1 cup Chocolate chip
- For the icing
- 2 cups powdered sugar
- 2 Tbsps mulled wine syrup

Preparation steps
1.
For the muffins: heat the oven to 190°C (170° fan) 375°F gas 5. Place 10 paper cases in muffin tins.
2.
Beat the butter and both sugars in a mixing bowl until light and fluffy.
3.
Gradually beat in the eggs, beating until fully incorporated into the mixture.
4.
Sift in the dry ingredients and gently stir into the mixture. Stir in the milk until just combined.

Spoon half the mixture into the paper cases. Sprinkle with half the chocolate chips and cover with the remaining mixture. Sprinkle with the remaining chocolate chips.
6.
Bake for about 25 minutes, until golden and risen. Cool in the tins for 5 minutes then place on a wire rack to cool completely.
7.
For the icing: sift the icing sugar into a bowl and gradually beat in the mulled wine syrup until smooth.
8.
Spoon the icing over the cakes and leave to set.
