- 1 kilogram Kale
- 3 onions
- 40 grams clarified butter
- 500 grams Pinkel sausage (or other sausage)
- 2 slices Pancetta
- 3 bay leaves
- ½ l Beef broth
- 1 tsp Caraway
- salt
- freshly ground peppers
- ½ tsp crushed allspice

Preparation steps
1.
Remove center ribs from kale, rinse leaves and blanch in salted boiling water about 5 minutes. Rinse with cold water and drain well. Peel and roughly chop onions. Coarsely chop kale. In a large saucepan, sauté onions in clarified butter. Prick sausage repeatedly and add to onions along with kale.

Stir in pancetta, bay leaves, hot broth, and caraway seeds. Cover and cook over low heat about 30 minutes. Remove sausage and pancetta. Continue cooking kale about 1 hour. Return sausage and pancetta to the pan 10 minutes before the end of the cooking time. Season generously with salt, pepper and allspice before serving.
