- 24 crayfish
- 1 onion
- 1 garlic clove
- 2 carrots
- 100 milliliters dry white wine
- 2 bay leaves
- 3 sprigs thyme
- salt

Preparation steps

Rinse crabs thoroughly under running water. Peel onion, garlic and carrot. Slice garlic and carrots and dice onion. Combine vegetables, wine, bay leaves and thyme in a large pot and add about 3 liters (approximately 12.7 cups) of water. Bring to a boil and simmer for about 10 minutes.

Season with salt, bring to a vigorous boil and add crayfish, one after the other. Cook for 3-5 minutes, depending on size.
Remove from heat and serve crayfish with soup.
